Yes, a delicious seafood dinner can also fit into your budget! This sheet pan supper (less dishes!) uses wallet-friendly Food Lion Atlantic Salmon and inexpensive veggies for a meal that’s elegant and fresh, without breaking the bank.

- Preheat the oven to 350°F and line a large rimmed baking sheet with aluminum foil. Add the potatoes and carrots in a single layer. Toss with half of the olive oil and half of the salt and pepper, and roast for 10 minutes.
- Using a spatula, move the carrots and potatoes to one side of the baking sheet. Add the green beans, tossing with the potatoes and carrots. Bake for another 5 minutes.
- Meanwhile, pat the fish filets dry with a paper towel. Drizzle the fish with the remaining olive oil. Season with the remaining salt and pepper. Using a spatula, move all the vegetables to one side of the baking sheet and place the salmon filets on the other side. Bake for an additional 5-8 minutes, or until the fish flakes easily with a fork.
- Meanwhile, whisk together the lemon juice and the mayonnaise in a small bowl. Drizzle over the vegetables and salmon and serve.
